“Mortar is a mixture of sand, lime and water. The surface of the meringues looks like a light mortar that holds and hides a very simple, round shape. The cake almost matches the sand and the beautiful, light-coloured sand dunes at Løkken and the North Sea.”
- 50g of dark chocolate (preferably 80%)
- 3 tbsp of milk
- 50g of butter
- 50g of sugar
- 2 egg yolks
- 50g of flour
- 1 tbsp of baking soda
- Meringues:
- 2 egg whites
- 200g of sugar
- Melt the chocolate with the milk in a saucepan. Whisk the butter and sugar together and add the eggyokes slowly. Mix with the melted chocolate. Finally, stir in the flour and baking powder.
- Pour the dough into a greased springform pan, place in the oven at 180 degrees and bake for
- 15 min. Take out of the oven.
- Whisk the egg whites for 5 min. and add 20g of sugar. Continue to whip until the egg whites
- harden completely. Add the rest of the sugar.
- Spread the meringues on the cake and bake again for 10 min. at 180 degrees until golden.
